I made this salsa for our NYE Mexican food extravaganza. It’s made from very few ingredients, takes NO TIME to make, and tastes delicious. You’ll never buy pre-made stuff again!
You’ll need: Fresh coriander (cilantro), plum or baby plum tomatoes (tomato quality is essential, don’t get those crappy floury salad tomatoes, you want bright red, juicy and sweet), a small red onion, a lime, and a red chili.
Chop up your tomatoes, onion, chili (add this to your own taste, I like it hot) and coriander (cilantro). Add to a bowl with a squeeze of lime, lots of pepper and salt to taste, and if you’re feeling frisky add a splash of olive oil. Mix it all up and leave for 15-20 minutes to infuse before devouring with homemade totopos (tortilla chips).
