I have a confession to make… this was the first time I’d ever had halloumi :O

Shocking!

And I don’t know why, either, I’m a massive cheese fiend! Anyway, to pop my halloumi cherry I decided to make griddled halloumi & roasted pepper burgers. I call them burgers, you can call them sandwiches, it’s all bread and cheese in the end.

Ingredients

Block of halloumi, I think it was 250g
Crust roll
1 red pepper & 1 orange pepper (you can use bell peppers or those fancier ones, or if you’re feeling super lazy just get a jar of ready roasted ones… I won’t tell on you)
Homemade houmous

Method

Start by roasting or grilling your peppers. I did this by slicing them and putting them under a grill for about 20 minutes, turning once. It wasn’t so much fun removing the skins, and next time I’ll probably halve the peppers instead of slicing them, the skin will be easier to remove then!

Slice your halloumi into sizeable slices, I cut our block into 4 slices (2 per burger because I am a CHEESE FIEND!), that are about 1-2cm thick.

Heat your griddle pan and grill the halloumi for about 30 seconds on each side. I was worried about it going really melty, but this is one substantial cheese! The cheese takes on colour along the griddle lines, and melts just nicely on the outside, sort of how mozzarella melts but more solid.

Then I got fancy and griddle crazy, I lightly oiled our crust bread and slapped them on the griddle pan for a few seconds for toasting. It definitely adds a great flavour to the bread, so I heartily suggest that you get griddle crazy, too!

Now it’s all about construction. Bread, Cheese, Peppers, Cheese, Peppers, Houmous, Bread. BAM! You’re done.

    Ooh this looks really delicious! I’m always on the hunt for non-meat burger fillings, because I love burgers but I’m vegetarian. I’ll have to try this!
