Do you use centre-weighted metering, or spot metering? If you're spot metering, it's probably best to meter off the sky (since it's usually pretty bright) and then you can recover the shadows in Photoshop or whatever. These are also lacking a little in contrast, but that can be adjusted post-shooting. You can't beat a good polariser when you're taking a picture with blue skies, though... brings down the brightness of the sky and boosts contrast. Very nice. I love that gherkin building...
