Summer! Summer’s finally here! So it’s definitely time to crack out the homemade ice lollys (or popsicles, iceys, whatever you wanna call them).

Homemade ice lollys are so simple, they require very few ingredients, little or no sugar, and cost a fraction of store bought ones. All you need to invest in is an ice lolly mould that you put in your freezer. You can even go as simple as freezing some diluted squash, lemonade or fresh squeezed juice!

Here’s a recipe I tried the other day, it’s pretty much a ‘Superfruit’ ice lolly, or a virgin Raspberry/Blueberry mojito ice lolly ;)

Ingredients

Giving you exact quantities here would be pretty defunct, it depends how big your lolly mould is! So just make an estimation of how much you’ll need.
Raspberries
Blueberries
Fresh mint
Lime
Sugar

Method

Squish your raspberries in a bowl, add the blueberries and squish them a bit (I quite like an occasional whole blueberry, especially if they’re deliciously sweet). Add a good squeeze of lime and a few chopped up pieces of fresh mint. If it’s quite thick just add a splash of water and mix well. Have a taste, if it’s a little too sour for your liking then add a little sugar.

Fill your ice lolly mould with the mixture and freeze! Voila! Delicousness!

I don’t care, there’s no way I’m gunna stop calling this MGM… no matter what the signs say! They renamed it to Hollywood Studios since MGM went under, but it’s still the same old park!

Pineapple Dress

Last night we headed to the night-do of our friends’ wedding (they got married in Key West, which is why we were in Florida). New Fence

The on-going renovation of our house and garden met a new high over the weekend, we finally got a new fence! The old fence was rotting, and it pretty much got demolished in the high winds we’ve had these past few months. My Dad, Adam & Adam’s Mum all pitched in and put the fence up (I was working hard on other things!), and it makes the garden look much better. All that rubbish on the right? That was behind the fence, I think it was our neighbour-that-backs-on’s stuff. Anyway, much better.

This was how the garden, and old fence, looked during our renovations. We’ve steadily been tidying it up and took down the two giant trees (they were half dead, blocking loads of light, and restricting the area we now use as a vegetable patch) and the murder shed (it looked exactly like the interior of a horror movie set in there).

Next big step will be a new garage, but that’s after we’ve done a few more improvements on the house itself (a whole exterior wall needs re-rendering). I’ll show you some more before and after photos of my house this summer! Looking back on the old photos really make me realise how much work we’ve actually done.

I’m calling this a Turkish inspired soup because it’s a mixture of a couple of recipes that I’ve found, both of which involve mainly the same ingredients, one of them being a middle-eastern soup (Astoria Soup from Jamie’s America Recipe Wednesday: Turkish Inspired Soup)  and the other a Turkish soup called ezogelin.

The soup itself is pretty hearty, but still lovely in warmer weather thanks to the freshness from the lemon & mint. Whilst I was making it I realised it’s pretty much a middle-eastern version of minestrone, replacing the pasta with lentils, rice & bulgar wheat.

Sumac was a spice that I’d never used before, I don’t think I’d ever even heard of it! I found some at a local shop, but you can find it online & in Waitrose. I definitely recognise the flavour from meals I’ve had in restaurants though, and adding it to this soup takes it to another level.

I served ours with some flatbreads that I got from the same local shop, if you can get hold of some then use them, otherwise tortillas and pitta breads make a great substitute. These were prepared simply by brushing with a little oil, sprinkling with sumac and grilling then for a few minutes.

Ingredients

1 Onion, finely chopped
3 cloves of garlic, finely chopped
1 Carrot, finely chopped
1  red pepper and 1 yellow pepper, chopped
1 stick of celery, finely chopped
2-3 Tomatoes, diced
400g tinned tomatoes
50g brown rice
50g red lentils
50g bulgar wheat
1.5l of vegetable or chicken stock
2 tablespoons of sumac
1 teaspoon ground cumin
2 teaspoons smoked paprika
Juice of half a lemon
Sea salt & ground pepper to taste
Fresh mint to serve

Fry your onion and garlic in a little olive oil until softened, then add your carrot, pepper & celery. Fry for 4-5 minutes until slightly softened. Add your spices (sumac, cumin & paprika) and fry for another minute or so.

Add your tinned and chopped tomatoes, followed by your stock. Stir thoroughly, heat for a minute or so until simmering, then add your rice, lentils & bulgar wheat. Simmer the soup for 25-30 minutes, or until your rice is cooked. Season to taste with seasalt & ground black pepper, add a squeeze of lemon. Also, if you think it needs it, add a little more sumac.

Serve sprinkled with extra sumac and fresh mint & your deliciously warm flatbread.

Couch to 5k Progress

I had a bit of a bad week last week, I just didn’t have the motivation and missed a few days of running. However, I didn’t throw in the towel or anything, and just picked up where I left off. The good thing is that my little break doesn’t seem to have set me back, if anything I felt even better than before. I think my body relished the rest and readied itself for more.

I can feel myself improving with every run now, and it’s even more evident when I’m running the same routes and ending up with better times, less out of breath, and managing to run up giant hills that were incredibly daunting when I started. My pace is improving, too.

After my muscle acheyness the other week I’ve been trying to stretch as much as possible before each run. I’ve certainly noticed the difference, and even though I was stretching before I don’t think I was holding the stretches long enough, or doing enough of a variety of stretches on the same muscles.

My run last night was great, I really felt like I could actually run, be a proper runner. I’m still just on week 3 of the couch to 5k training, which means that the maximum running burst is 3 minutes at a time, but that’s 3 times what it was in week 1! The best thing is that I feel I could run longer bursts than that, but I wont, I’m liking the structure of the training. The nike+ app is still amazing me, too, I’ve joined a few challenges on there for extra motivation. I highly recommend it!

In other news, check out these amazing raspberries that I picked from our garden. They’re delicious!

Epcot was, and always will be, one of my favourite disney theme parks. It’s not as rip roaringly rollercoaster full as other theme parks in Orlando, but it’s definitely got some of the best decorations, restaurants, hidden Mickeys & attractions.

We went midway through our week in Orlando, and spent a good full day there. We planned to stay for the fireworks but were wiped out by 7pm and decided that we’ve seen them before so wouldn’t really miss much. We finished our day with a meal in China :)

Manchester from Above

Yesterday evening I went to MOSI for a lunar eclipse event that Adam was taking part in, we ended up leaving MOSI at around 8.30pm and going to the Cloud 23 bar in Beetham Tower (the Hilton tower). The bar itself is nothing to write home about, it’s a pretentious haunt of Footballers & bankers, plying their dumb squeezes with tacky champagne and toasting their super injunctions. Not to generalise or anything.

However, it has some fantastic views of Manchester, I’d have taken some more photos had I not felt like a tourist O_O
